Just ordinary semi-skimmed to make the custard base, then between 3/4 to one ounce of sugar to each egg yolk, then, weh chilled, double the volume with double cream. I keep an airtight jar in the larder with sugar & a vanilla pod, makes the smoothest creamiest vanilla ice cream you've ever tasted. Experimented with a new flavour last week, nutella (but using Sainsbury's own brand). Not good enough, need to increase the nutella content, then (to copy some I had in the summer) add some crushed Ferrero Rocher. On the other hand I might have another go at Toblerone ice cream, haven't made that for years. | |
