Indeed, although they might eat ragu more frequently which is what I make. When I had a cooking lesson in Tuscany it was veal mince and pork sausages removed from the skins so I've stuck to that ever since. Key is good portion or carrots and onions and then long slow cooking. They do use insane amounts of olive oil though, had to cut it down drastically when made at home. SB | |
