There's a great recipe in a Southern Italian book I have, then at the bottom the author basically slates the dish as a nonsense that might be eaten with different pasta if the Italians have nothing else in! Couldn't get a more British dish.

Tish, for absolute authenticity a proper bolognese should have pancetta but unsmoked bacon will do at a push.

Sopt on. I made bolognese sauce tonight. not entirely authentic, but with pancetta reduced right down to little crunchy nuggets. Yum!

Indeed, although they might eat ragu more frequently which is what I make.

When I had a cooking lesson in Tuscany it was veal mince and pork sausages removed from the skins so I've stuck to that ever since. Key is good portion or carrots and onions and then long slow cooking.

They do use insane amounts of olive oil though, had to cut it down drastically when made at home.
