Don't want you to be ill, so must inform you that I'm not a qualified food safety expert! but I regularly use meat that's months (up to 2 years) out of date, as long as it was frozen on or before the use date, in good condition at the time of freezing, AND kept at -18C or lower; and I've never been ill from it (have quite sensitive digestive tract too).

The fattier the meat tho, the less good the flavour will be.

It's really a pretty rubbish system which doesn't account for how things are stored or anything really.

There is some development in smart labels whereby the label actually degrades at the same rate as the food given the conditions it's kept in. It's taking a while to get to market though:

I've sometimes found mince in the freezer months past its use by date and cooked it. It was of course put in on or before the date originally.

It should be fine. I buy meat at a butchers shop, so no use by dates. I keep mince up to 6 months and usually cook from frozen in a saucepan. (Fry onion, add garlic, Chuck in the mince and break it up as it defrosted over a med-high heat. Never had any issues.

As long as you leave it out in the full sun for 72 hours to defrost first you'll be fine.

Two years?!? I thought 6 months was the maximum you should keep frozen stuff, because frozen stuff does deteriorate (just much slower).

6 months from the flavour point of view.

2 years is what I've found through long experience to still be safe (well I'm still alive and have never suffered from food poisoning - though a recent batch of in-date almond milk where the top had come off but the foil seal underneath was still intact & it smelled & tasted OK but I felt rather ill after drinking it yesterday - was a different matter!)

Must reiterate though - you need a proper 3-star freezer where the temp is constantly -18 or lower to do this.
